What's the comparison between the knives by 3Cr13 and by 5Cr15MoV?

I worked at an OEM factory. Though we focus on making professional knives, but are only good at develop and produce the knives as per customer's requests, know little on why some customers prefer 5Cr15MoV, some customers just prefer 3Cr13, and how to tell the difference technically and professionally, so that to help our new customers to test their markets more easily and correctly?

Never used either one, but according to my data 3Cr13 is Daido steel correct? And 5Cr15MoV is GB standard name, I couldn't find any other names for it.
Based on composition(3Cr13 vs. 5Cr15MoV) may be that 0.10 V makes difference for some, and others just prefer trusted name like Daido?
