Of steel? Why?
Mine is VG-10 for an EDC/beater knife. It sharpens easy, keeps its edge well, and doesn't chip. It used to be S30v until it chipped on me. Now I feel like I have to be really careful with it. I still like it, and I still carry it, but I just feel a little more at ease with VG-10.
 
What knife in S30V do you have that chipped out? I used my Umnumzaan to shave pieces of metal off of some tongs to prove a point, and the edge rolled but didn't chip. They straightened right back out after 30 seconds on a ceramic stone.

VG-10 is a great steel too, but I've had a few knives chip on me.

It was an Enerson/Kershaw auto that a drunken friend was abusing. It was the first time one of my knives chipped. I switched to VG-10 because it has a reputation for rolling rather than chipping.
 
Currently its Elmax. Used to be M4 but after edcing my 0551 for quite some time, I like how the edge holds up, its not a PITA to sharpen and its stainless. That being said, I havent had much experience with M390 or S90V
 
Recently, Aldo's 1084, and some 5160. It's all in the heat treat and geometry. I owned a 1084 Nessmuk and a couple of Ontario's in 5160 already. But, two custom made blades I now have are way better in edge retention. Maybe because they are forged, not just stock removal.
There is something about Aldo's 1084, especially from a smith!
CPMS35VN is a new one to me as well, reviews are great, I'm still getting to know it, I've been busy.
 
i like VG-10, but since i don't use my knives everyday & when i do it's usually not hard use i've really been enjoying my S30V blades. i simply like having them so isn't that reason enough for carrying them?
 
for folders, S30V. although i have been using ELMAX recently and it has been really good so far.

fixed blades i like some good ole 1095.
 
I love S30V... El Max is good... so is S35VN... M390 is great... N690 is pretty darn good... M4 works well... can't forget CPM154/154CM - they are memorable... D2 do be a goody, too - crap, Buck's 420HC is nothing to sneeze at, either! German carbon steel and A2 work well. It really is like a favorite flavor - of ice cream. I love almost all ice cream. It's easier to state what I dislike - I hate butterscotch - got sick on peach once. I don't like 440C - hate 400A & Pakistani 'Stainless'. Not so fond of a blade steel you cannot buy in the US - sorry VG-10.

Used to be CPM-M4 with a high hollow grind. Now I'm more into M390 since it essentially seems to be a stainless M4.
 
any steel will chip out now and then, if we're being broad on what we mean by chip (very small chips).

I generally run with S30V but I'm playing with CPM-D2 this year...
 
I couldn't pick a favorite steel if you put a gun to my head. They are all unique and have their place.
 
From nonscientific anecdotal experience, my overall favorite user steel is Sandvik 14C28N, particularly on Kershaw's Skyline and PackRat. I've also had experience with 420HC, AUS-8, S30V, Gerber mystery steel, and VG-10, and I can get the Sandvik steel sharp easiest (especially with the Skyline's hollow grind) with my spectacularly mediocre Sharpmaker skills. I'm not afraid to use it, because I know I can get the edge back.
