whats your favorite stainless and favorite non-stainless?

just curios of every ones opinion. not trying to start a whats better debate, just your favorites. i at this point haven't put too many different grades threw there paces, but my favorite skinner is D2 and my favorite edc is 12c27, mainly for the blade/knife design than the steel though. though i do find it to be good steel.

Based on ones I have and have put to use... S30V for stainless and CPM-D2 for non-stainless.

Recently picked up a 110 in CPM-154, of which I've heard lots of positive things. I'm eager to see how that handles for me.
 
I just like s30v or s35vn. Works well enough for me. Don't really use non stainless enough to judge. Had an lfti but didn't use it much. Bohler K110 steel seems good, the crkt Ken onion skinner is a nice fixed blade for the $50 mark.
 
VG10 and 154CM all the way, for stainless. D2 is dangerously close to stainless, but that's part of why I like it so much. Just a great, great steel, and my favorite non-stainless so far.
 
Stainless: Elmax
Tool steel: CPM-3V
non-stainless: O1

There are, of course, lots of great choices in all three categories. I tend to stick with these for their balance of toughness and edge-holding, with a little more emphasis on toughness.

not many ken onion designs i dont like. a kershaw leek is my edc.

ya, you may be right. i think choosing D2 may be cheating. i guess next in line would be 1084 for me. though for a different purpose knife... a chopper
