What is the recommended wheel speed for leather/paper honing wheels? 1725 rpm or 3450 rpm? Thanks.

I think people generally like slower ones. That way mistakes aren't as bad if they do happen.

I have paper wheels and I prefer the slowest speed my variable speed grinder allows. 200RPM.

I run my paper wheels at 3500 because of the grinder motor I have, but I would prefer to get a 1750. As above mentioned, 3500 can take off metal fast on the grit side if you slip or bump wrong.

Are you sure you don't mean 2000?

Sorry, missed a 0. :o Makes a big difference for sure.

Sometimes when I have hours and hours of free time, I like to use the hand spinning method to save on electricity. ;) Anyone have a hamster powered grinder?

1725 if at all possible. With paper wheels you can heat a blade up very quickly. The slower the rpm's the better you will be. I have used both and highly recommend the 1725 over the 3200.
