can you tell me if there is a big difference using a 14" over a 8" contact wheel , doing hollow grinding?

In the actual method of grinding "No". In the look of the blade and geometry, I would say "Yes". If you had to choose between the two, I would go with the 14". I have a 14", 10", 8", and a 5". I use the 5" for daggers. I don't use the 10" much. I use the 8" on smaller knives. I could use the 14" for almost everything, except daggers.

The 14" will "slip" out of your initial grind a bit easier, so there might be a noticeable difference between the two when starting out. Otherwise, I agree with Mr. Barker above, a 14" and a 4" wheel would be my choice if you only gave me two wheels. If I could only have one though, it'd be an 8 or a 6.
 
I have a 14, 10, 8, 6, 5 and smaller
The 14" is the hardest to use since the groove is so shallow. It's much easier to get a sharp wide grind on a big knife using a 14" than it is to stretch an 8". I started with an 8" and it is still my favorite but I find myself grabbing the 14" more and more, especially working on larger knives (+5" blades). I use the 5" on swedges. Hope that helps Vern.
