First time seeing one of those but I’ve always though that I would love to give my wife an INFI addition for the kitchen.

Although I can see the attraction to thin kitchen knives for cutting something like a carrot. My personal experience is that thin isn't a big deal. If I think about nice cuts in food prep I think Sushi. I have a nice Yanagiba and it sure as hell isn't thin; and it will make slices of something like cucumber that you can see through.

Old Jim let any more go?! Maybe I could trade him a boat load of Flavor-Aid for one........

Have a thick and a thin and I really love them. Just cut up some sashimi salmon a few nights ago with the thick.

I got them back in like 2002 when I first discovered Busse. Traded a shotgun for them from someone named Nick.

Elmax Redux?!?

Please!!!

That .080 stock with sorcerer-level heat treat would give any kitchen knife a run for the money! I guess 62RC INFI (ala BAD) would be awesome as well, but....
