Where can I learn how to sharpen knives ?

I bought a couple Spydercos recently, and I am about to order some high-end kitchen knives. Where can I learn how to sharpen these guys ? I used the spydercos for a couple weeks, and while they are still very sharp, I have already noticed that they were slightly sharper when I received them.

On a related note, do you know any good knife shop in the Los Angeles area ?

Get a Spyderco Sharpmaker. It comes with a how to DVD demonstrated by Sal Glesser himself.

If you want to learn te free sharpen by hand, I'd suggest you start with something inexpensive like an Old Hickory kitchen knife with a blade long enough to perfect your stroke.
 
There are many good articles on the forum of different tools and techniques to use. Other than that you learn to sharpen the same way you get to Carnagie Hall Practice,Practice Practice. (stock up on bandaids!)

Esav, thank you for the links. I have found many posts related to sharpening by using the search function, but it was quite painstaking and took more hours than perhaps I should, because I end up going off on too many tangents. Or maybe that's a good thing:D.
Anyway, would you consider making your post with the links a sticky?

There is a great knife shop on Broadway in Downtown LA. It is across the street from the Grand Central Market. Just check the LA yellow pages for an address on Broadway.
