Recommendation? Where to buy in Thiers France

Greetings from Geneva Swisscheeseland! I am heading to Thiers in a few months for a family vacation. While I am there, I want to buy a chef knife that will be the workhorse in my kitchen. I am not looking for an art piece. Who should I consider in the area for a quality custom piece that will hopefully last forever. Bonus points if the shop is willing to give my kids a view of their operations and give me 10 minutes of instructions to take good care of the knife.
