I have been looking around for one of Spyderco's kitchen knife sharpeners, Galley V, model 600F, but I can't seem to find anyone who carries it. Anyone know where I might find a set?

Also, has anyone out there used one on their regular folding knifes? I am curious as to what you think of it.

If you try, you may fail. If you don't try, you certainly will.

You can try and ask Top of Texas Knives at http://www.toptexknives.com ... I believe they can make a special order for you at a very good price.

The rods are in a "cats-eye" configuration, somewhat oblong is shape. Though I've never tried one myself (I have the Profile 700, the Sharpmaker 204, and the doubestuff) I sometimes use the Profile700's rounded side to even up the angle, or to correct minor dings and bends from the edge. I believe the Galley V was designed for kitchen use, not sure though..

Good luck!

Thanks for the lead.

The kitchen application is part of why I am curious about it. My old 203 has a 25 degree off vertical angle. The 600 is advertized as 15 off vertical which, I believe, is more in line with flat ground blades.

The other aspect I am curious about is how well the narrow taper of the 600 works on sharpening serrated blades. Since it is rounded it looks like it would sharpen more evenly than the corners of my 203.

Yes, I believe the tapers would do just fine with serrated edges. That's the same taper (almost) I have with my Profile700 stones from Spyderco. The "Cat's eye" design improves a lot over the simple rounded stone normally found on other ceramic sharpeners.

Another site to try is http://www.fe3stone.com which is Spyderco's factory outlet I believe. I saw it advertised there, though not sure if the site is finished already.

Oh yeah, why not just get a 204? It has two angles, one I believe is 15 degrees, and the other, 20 degrees. Costs around as much as the 600, but you get both medium and fine stones. Works great on serrations, too!

CJL101 - Charlie at the store can probably dig one up for you. We stopped producing these a while ago. (worked great, too expensive). They were designed for kitchen knives used in commercial restaurants. Longer stone(we made them in 10", 12" & 14").

I use one at home each time I use a knive in the kitchen. Two of three swipes and my knives are always scary sharp. I only use it on my kitchen knives.

Corner is same size radius as 203, 204 & Profile. Works well on serrations, but angle is significantly thinner and may take time to "re-angle" a blade. Hope this helps.
