Where to go?

Ok, I have a week off in Dec for Christmas vacation & I'm looking to go camping. Question I have is, where would y'all recommend me go? This will be the first real time I am going since backyard "camp out" when I was little. I'd like go somewhere that I'm able to start a fire & do some quality hiking and exploring, I really want to test the knives I've bought and will buy before Dec.(I'll bring pics) Mind you, I'm in CenTexas, outside Austin & the only place that I have thought of is lost maples outside Fredricksberg. Any places you guys think that fit the description or have been before would be appreciated. Thanks guys.

ESEEfest last week was in the Sam Houston national forest just North of Houston.
fire friendly, some trails, lake to fish in, showerhouse if you're brave. (passive solar heating)
 
Very cool, I appreciate it. Didnt even think about showers. Figured if I was gonna clean up, it'd be in a stream. Thanks Vik.
 
another place that I love is Meridian ,Texas off of I-35 north of you , small lake ,boat are allowed but have a 15mph restriction, rent a cabin type shelter or primitive camp spot ,2 trails one around the lake and another larger one out in the sticks...Great scenic views off of the trails
Fire friendly,restroom & showers available if needed.... I am going back in the fall ,great get away,I have a few pic of the place... My Family enjoyed it
