i saw one on a web site the type that has a ball joint rod end with a steel rod through it and you can raise and lower it for different angles anyone know who sells them?

Nobody that I know of, I know the one you're referring to though. The guy made it himself. For something simple, just cut a wood wedge at the angle you want and place it on the spine side of your blade. Actually, cut a lot of wedges at the same angle, they tend to disappear quickly.

The sharpening system is called "The Warthog". It is imported form South Africa.
Their "V" sharp jig really puts a super edge on fillet knives.
The ball joint jig is OK, but you can build a sturdier one yourself.

There are several other systems out there using the same principal.
