Which Edge Pro Model: Pro or Apex???

I have been considering one of these for a while and believe that I should forge ahead and get one. Now the question is which model, the Professional or the Apex. I know that the Apex has some parts made of plastic, however, which would be better for occasional sharpening? Is the extra price of the Pro worth the sturdier construction? Can I achieve the same consistency with either? I thought that the Pro was for someone that either sharpens knives for income or uses their knives hard, but I have noticed a lot of folks on this forum have bought the Pro. Your thoughts and opinions are appreciated. Thanks.
 
Get the Pro, its worth it, you will not regret it, and Ben is a good guy, call him and he will be glad to explain the details.
 
Pro if you got the money:D , the Apex is great, but everyone I know sells the Apex to trade up to the Pro. It's made out of materials meant to stand up to use in a restaurant, or a Profesional Sharpener.
 
Three points.
  1. You can do everything with the Apex that you can do with the Pro.
  2. You said you need something for occasional sharpening only.
  3. The Pro model is designed to be used by knifemakers or people that sharpen knives for a business.

    Given these things, save your money. There is no need to shell out the extra dough for the Pro model. The Apex will more than serve your needs. Unless you are the kind of person that is never satisfied unless you have the very top-of-the line model, and I assume you aren't, or you wouldn't be asking for suggestions here, then just go with the Apex. Use the extra money that you saved for upgraded stones, or even for a Spyderco Sharpmaker. Most likely you will do like most people here that have an Edge Pro. They will use it to reprofile an edge to a certain bevel angle, then just use a Sharpmaker for routine edge maintenance. Let's face it, the Edge Pro isn't nearly as portable as the Sharpmaker, and once you have the edge properly sharpened to the correct angle, it's nothing to touch it up quickly on the Sharpmaker.

Medic is right on about this. Get the Apex. I recently bought one and am very happy with it. I called Ben and was still udecided which to buy, Ben told me the Apex would fit my needs better. I had very similar requriments to yours, and that is what the designer of the product suggested.

Get the Apex with the upgraded stone package. Also, get the ceramic steel if you dont already have one. All those things together make a great package. If you get the pro I'm certain you'll be happy, however, I think you will also be very happy with the Apex.

One other thing...I too was a littel down on the fact the Apex was plastic. Trust me, this thing is very well built. No need to worry about the plastic as far as I can see, it is very durable.

Either way, Apex or Pro, you will be happy.

I have an Apex and absolutely love it. The only thing it can't do that the Pro can is to sharpen scissors with the optional attachment, and unless you're actually a professional sharpener or just have a ton of money, I don't see why you would need that anyway. I doubt that you would be disapointed by the Apex, it's a great product.

Just curious, but with his criteria and needs, why get the Pro instead of the Apex? If all he is going to do is sharpen an knife every now and then, wouldn't his money be better spent on the less expensive, yet just as effective Apex?

Like I said earlier, use the extra money saved, and buy a Sharpmaker for the routine touch-ups because you are kidding yourself if you think you will break out and set up the Edge Pro everytime you need to touch up an edge.

I use an Apex for what I consider occasional use. I use it to sharpen knives for chefs who are willing to pay for hand sharpening. I use it about 6 hours per week. I'll bet your use won't be anywhere near that. Yes, it's made of plastic and I'll probably have to replace it after a couple of years. I imagine that would be the equivalent of a lifetime of your occasional use. I'd buy any Edgepro that I could mount more securely to a table, though. I hate the suction cups. Take care.

Ultimately, I suppose it's a matter of taste (like most things in life).

I only sharpen occasionally too, maybe once every 4-8 weeks (depending on use). I strop on plain old leather in between.

I have owned and used a Sharpmaker and a Lansky, neither of which suited my needs. I did a lot of research before buying an Edge Pro. I talked extensively to someone who had used one for years. My reason for getting the Pro model was that I fully expected that this would be the last sharpening tool I'd ever buy, so why not get the "top end" model? IMHO, the Pro is worth every penny. I don't have the "voodoo" for free hand sharpening, yet with the Pro I can put a shaving sharp (or for that matter a rough grippy) edge on any knife I sharpen.

I, myself, like the suction grip. It holds like cement on a kitchen counter top. It's quick and easy to disassemble and clean up afterwards. I never tried an Apex. I'm sure it's great too. For me, the Pro was definately the right choice.

I'm sure it's just best to measure your own needs Ro (as mentioned).., but I have also seen quite a number of guys move up to the Pro Model.

I have to say I never thought I'd switch from using a Tri-Stone Norton India Stone set-up.., and I do still use the Nortons at times.., but the Edge-Pro is awfully darn good! I suppose I'd say pop for the extra bucks if your on the fence. The Pro version will last forever.
