Which finish for burly birch?

I had some trunks of birch with a lot of burls on the sides which I have cut into 12mm thick slices. What is the best finishing metode in order to get the the best contrast and colour of this wood?
 
I use Old English for light furniture for my puukko handles, then polish with hard paste polish.

Hand rubbed Boiled Linseed Oil.

Shellac or varnish might work, but may not last as long as you'd prefer.
 
A few layers of thin CA glue, with sanding in between.
I use this with wood that is not stabilized and not naturally oily. I find it waterproofs the wood, plus adds a hard protective layer. I did this on some kitchen knifes and it worked great.
 
I use Tru-Oil, cut with 1/3 mineral spirits. Wet sand it in, then wipe clean. This method was originally for black walnut, and posted up by one of the better known makers, but now I don't remember who. I use it for both raw and stabilized birch.
