You could get a well established and proven knife like the Benchmade 710 or 943, or Spyderco Military. The Zero Tolerance line is also very nice.
But the knife that I'd recommend the most would be the Spyderco Gayle Bradley. It's just built and finished so much better than other knives, both in its price range and well out of its price range. The carbon fiber handles are really a beauty, and they have a good grip as well. It's a super durable knife, but looks nice as the same time (the liners are polished on the edge). The opening is fast and smooth, and the clip is a step up over cheap painted black ones. The best part about it, though, is the blade. It's a high hollow grind that's really thin behind the edge, so it slices like no other. The CPM-M4 steel will hold an edge better than pretty much anything out there. Plus, unlike competitors like ZDP-189, it's tough, so it won't chip or damage easily. I think it's the best value in its price range, by far.
