Which grit?

I have been using the Apex EdgePro to reprofile and/or sharpen my Busses. I have noticed, however, that there are some grits that seem to draw cut better while others are better for chopping, etc... Do any of you have a break down of what you do for your various blades.

Choppers = grit ?
Skinners = grit?
SD Knives (draw cuts) = grit?
etc...

Or do you guys keep the same grit on all? Thanks.
