Hi all, I'm looking for opinions from owners of either the Jet 2x42 model j-41002 or the Grizzly G1015. They will be used for sharpening and repairing household and restaurant kitchen knives. I also would like to know of a reputable teacher on how to professionally repair and sharpen japanese knives. I understand that using stones are the best way to get a professional finished edge but want a decent 2x42 belt sander for repairing. Any advice would be very helpful as i'm very new to this field.
