Which Maxpedition should I get

I want to get a maxpedition hip pack but I'm not sure which I want.

I want to use it mainly for fly fishing and hiking with my dog.

Here's what I want to put in it normally.
mini-maglite for now.
headlamp Myo5 (sometimes)
Folding knife - AFCK.
Medium can of bear spray
small air horn for bears (did I mention I've been attacked by a bear)
Those would have to be easily reached ie hanging on outside of pouch
Maybe a handgun (see above)
32 oz Nalgene bottle
Water Filter Pur Hiker
First Aid Kit - Small
Survival Kit - Small
Poncho or super compressible raingear


On top of that
A days worth of energy bars and snacks
Hip flask ;)
Dog food/treats -- for the dog not for the Survial kit ;)
Tennis Ball.

For fishing it has to hold
2 Fly boxes and another similarly sized box of accessories.
But it has to be able to be worn at different positions occassionally. I don't normally fish in water above waist deep but sometimes I cross it.

I'm thinking either the Proteus or the Fat Boy. Probably the Proteus to hold more stuff. Is the Proteus comfortable enough to wear for 8+ hours straight? And the Fat boy? Which would be easiest to wear a little higher up on the body for stream crossings?

The Fatboy is pretty big, but I don't think it could hold all that. I'd go with the Proteus.
 
I agree with Steven, the Proteus might be a better choice. As for comfort, the Fatboy is good for an entire day even with a full load. The Fatboy can be adjusted high enough if needed to cross a stream but bear in mind, it isn't waterproof. Personally, some of the items you've listed are better off carried on your person and not in or on your bag. When I'm in the field, I carry a modded Penrith-type SK, several knives, first-aid kit, pistol and ammo, energy bars tucked into ziplocks, and some kind of water container (filled) on my person at all times. This is in the event that I'm separated from my main gear. If moisture is a concern, appropriate equipment might make things easier.

You won't get all that in a Proteus IMO - however you can attach extra 'pods' to the Proteus like the M2.

You best bet would be a normal backpack IMO.
 
You actually have more usable space in the Fat Boy than the Proteus based on the objects you want to carry. Specially that handgun. As well as for comfort. I can wear the Fat Boy pretty much all day.

The only thing that the Proteus has over the Fat Boy from your questions is that you can wear the Proteus like a Bandolier so it can be worn higher and therefore quite easy to go waist deep for fishing.
 
You need one of their backpacks. Neither the Fatboy nor the Proteus will hold all that stuff. IMHO, between the two, the Fatbboy will hold more a little more.
