Which of these 2 blade steels would you choose and why?

S90V or Vanax 35. The knives I'm considering are identical otherwise. Ease of sharpening isn't important to me but durability and edge holding are. Thx!

Neither is exactly weak, S90V will hold an edge longer though.

Well the question is how much edge retention do you really want?

Other than that it's a tossup, flip a coin.

I want an edge that doesn't roll, flatten or chip easily (doesn't everyone?). I have had issues with Rocksteads, for example, chipping under even light use. I believe this is because they are actually too hard.

That has less to do with the steel and more to do with the heat treatment, tempering process, edge geometry and blade geometry.

And that will vary greatly depending....
