Which of these steels are the easiest for learning to forge and heat treat?

Hi there,
I am new to forging and hope someone can help me choose; I have 3 different kinds of knife steel to choose from:
- 11274 (or 1095)
- 12235 (or L2)
- 12003 (or 75cr1)
Which steel is the easiest to forge and heat treat (the crude way)
