For the kitchen? I've recently tried out my Moran which is excellent in small butchering and slicing. Now, should I get another Moran or go for the Santoku?

Go or the whole set of plain blades. I did.

I just finished cutting up a chicken with the Santuko and the Chef's knife. I actually don't like the chef's knife that much. Hard to keep that tip going in the right direction when the blade is that long and thin (flexible).

My recommendations? Get the Santuko, the large utility, the small utility, and the mini paring knife. All in plain edge of course. I used some high dollar Henckels for year and these Spydies blow them out of the water, performance-wise. I was forever sharpening those Henckels......
