Which Steel

The best steel in the world is from Jamaica and it is called Rosta-Frei Steel.

I like Carbon Steel's for Fixed blades (No Chipping), but 154CM or S30V for Folders (Edge Retention).
I honestly don't understand the difference between 154CM and S30V though.
With S30V being used by top makers (Strider + Chris Reeve etc.) and 154CM used by other top makers (Dwaine Carrillo + Emerson + Extrema Ratio etc.) - Why do they stick to that specific steel???
 
Or because they are used to and have perfected the HT of a specific steel and won't change what isn't broken. (Buck with 420HC is an example)
 
If I had to pick one do it all steel it would be 1095. From pen knife to machete to kitchen to camp to apocalypse. One steel, readily available, performs far better than it's old age and low cost would suggest. You could find a better steel for certain applications. Infi for toughness, ZDP-189 for edge holding, H1 for oceanic uses. But you can't find a two blade trapper in Infi, you wouldn't chop with ZDP. And there isn't a huge selection of H1 blades. 1095 is it. Runner up in stainless, 12c27.

CPM-3V. Super-tough, very good edge retention, and enough chromium to be slightly stainless. Only drawbacks are expense and availability. You just don't see many choices in it.
