A maker provided me with a knife that has a mirror finish. He puts a film of wax on the blade. Held just right in the light the finish looks a little strange, I'm sure because of the wax. In response to my question about removing the wax he said to use Simichrome because he heard Flitz caused problems for some folks (non-specific).
