Share your favorites. Here are two of mine:
Tomato and bacon soup
(This one is great for cold weather camping trips)
Ingredients:
1 small package bacon, cut into 1" lengths
2 family sized cans Campbell's Tomato soup
3 cloved garlic, finely chopped
Directions:
Cook bacon in cast iron skillet until crisp. Drain on paper towels.
Brown garlic in bacon grease. In a separate pan, add the bacon and garlic to the soup and two cans of water. Simmer for a while to meld flavors.
Kidney beans and ground beef:
Ingredients:
1-2lbs ground beef
2 cans kidney beans, drained and rinsed
2-3 cloves garlic, finely chopped
chili powder to taste
potatoes for mashed potatoes
Directions:
Cube and boil potatoes for mashed potatoes. While this is happening, brown garlic and ground beef in cast iron skillet. Add kidney beans and chili powder, and cook for 10-15 minutes on medium heat. Mash potatoes, adding butter, yogurt, or whatever you usually add to your potatoes, and serve the kidney beans and ground beef over the potatoes.
Both of these recipes are quick and dirty, but surprisingly tasty.
