Who Can Identify This Knife?

Hey y'all! My in laws we just in France and they brought me back this cool folding knife. I am not sure what kind of steel it is but it holds and edge well and it is very sharp. I want to see what else this company or craftsman has for sale. The problem is there is no company name. The only thing on this knife is an emblem of a Hammer and a Chefs knife. Does anyone know who makes this blade?

No idea. The blade looks like le Sabot's, ie made in Thiers. Handle shape look like Corsican knives. May be a SFO for a shop. Have you an idea of which city they found her?
