Man you guys are gonna crap when you figure out what this is. No one has gotten close yet. It is a hanger/rack, but it has a VERY specific purpose that Ethan Becker and Beckerheads in general would approve of.

I post this because I just now salted a pork belly. Next Sunday I'm going to smoke it with hickory and a tiny bit of apple. It will then hang on my bacon rack for 28 days in the basement. That is the method used by Benton's.

I have done my own bacon every year about this time for the last several years. Here is my basic method:

This year I bought a bacon rack off of ebay. I am hanging the meat this year after it comes out of the smoker. I haven't done that before.
