who makes a good chinese chefs knife?

who makes a good chinese chefs knife?, i am looking to buy and need some help in figuring out what is good, junk, and way over priced.
wanting a carbon steel viariant for ease of sharpening.
 
Check out the CCK Chinese cleaver. They have a few models, they're very thinly ground and not terribly expensive. Love mine.
 
CCK, Dexter, and Mercer Genesis are all very thin Chinese Chefs knives. I own more expensive ones, but these are the ones I keep coming back too. You can spend a few dollars for a cheap carbon one and it will cut very well even when its dulling providing its very thin. We are talking ones that are made for veggies.

Most if not all Chinese households use a medium weight model that will do small bones as well as veggies. You can still make very thin slices of veggies with a properly ground medium weight.
 
CCK and Shibazi are the big names but there are dozens of other makers in China. Dazu is a city famous for high quality cleavers among others. Most Chinese prefer stainless because they don't understand why anyone would want a knife that will rust. Every time I go over there I come back with another suitcase full of cleavers I had never heard of before the trip.
 
Dexter-Russell is the industry leader in Chinese Chefs knives and have been doing it for the western market longer than anybody. At under $40 you will have a knife that will last years in a professional setting. One can spend a lot more but your just paying for icing for the cake.

Far as I can tell Dexter only make the thin vegetables and boneless meat type of cleavers these days. Not that common in China
