I've googled to no avail. Who makes a smooth butcher's steel? All I can find is the type with the grooves. Thanks!

Try doing a search on poliron that is what it is called, i have an old F. Dick oval one that i use on my carbon steel knives in my kitchen. I think F. Dick still makes them.

I got the half grooved, half smooth, but the grooves are so fine I have to hold it up to the light to see the difference.

I have 2. 1, a 12" for the house and a 6" (no handle), for the field. Both came in sheaths made from stropping leather.

You will not go wrong with HA.
