Who would have thought you could break a knife in Cauliflower?

thats a pretty thin blade actually and cauliflower can be some tough stuff to cut up. what kind of guarantee is on the blade?
 
All the same I wouldn't expect that from a Dexter Russel. They may be thin but they're made for industrial kitchens--they run them closer to a spring temper than anything else.
 
We've used the knife for 30 yrs and never had any problem. Occ gets put in the dishwasher, but not exposed to anything that would affect the temper. The rust spot is superficial and recent.
So it was really a surprise when my wife broke it while cutting the stem out of the cauliflower (It was a Large cauliflower, and the did insert the blade DEEP). Have a new Vic Boning knife on the way.
 
Could have been a point of repeated strain and it just finally gave way. After 30 years you certainly got your money's worth out of it! :D

Have definitely gotten my money's worth from it and my other Dexter Russell knives (two chef knives, Bread knife, Slicing knife, Vegetable knife). I am not complaining about their quality, as they have been our beat, abuse and put in dishwasher knives.
Just got a few Victorinox knives to add to the "everyday" collection, including a flexible 6" boning knife to replace the broken one, a 5" "chef knife that looks like its going to be a useful "utility" knife, and a Bread knife, as the D.R. knife is getting dull, and my attempts at sharpening the serrations have been less than stellar.
 
I adore the Victorinox/Forschner line. They may not be fancy (same with the Dexter Russells) but boy do they perform! I'm also really liking the Opinel chef's knife. I got them in the shop for sale as double duty kitchen/woods blades as they resemble medieval belt knives. Nice thin blades with full convex grinds. They chop wood WAY better than you'd expect for something so light! :eek::thumbup:
