Every knife I do, I count the strokes on each side, turn it over, and do the same number of strokes. I flip, flip, flip, over and over, counting all the while.

Sometimes my head wants to explode. It is like patting your head, while rubbing your tummy.

Today, I stopped counting.

I installed an Interval timer on my smartphone. The one I picked was Interval Timer by Thrasher.

It tells me when to flip, and when to change grits.

There are hundreds of choices in the app stores. Most of them are free.

Warning, do not install one by 3D play phone inc. It is a root program, that only lets an admin remove the program. It captures your cell phone data and does who knows what with it, plus it is a crappy app. I had to use a special app removal tool to get rid of it. lol

Sharpen your knives by a PC or Mac, here is a free interval timer on the net.

Sharpening is so much easier, now that I have a coach to tell me when I am done on a side, and when I need to change grits.

I used to count strokes, but then I found that a bigger issue was pressure per stroke. You seem to be very concerned with precision--have you given thought to how much pressure you are putting on your jig system(s)?

I don't count, I am more concerned with pressure and consistency. I go on feel more than amount of strokes to know when I am done, it's hard to explain but it seems to work for me. Though I free hand now days so were generally using completely different methods as I've seen your more of a fan of sharpening systems and I have slowly moved away from that.

I don't count, I go till there is a burr along the full edge then flip, depending on the grit and current state of the edge I will either do both sides once or twice per grit. Learning not to count strokes was one of the first steps of truly learning how to sharpen for me.

I don't count either. I go by feel of the stone and burr. I only care about strokes per side when I'm deburring.

I do equal strokes on both sides, turning once I get a complete solid bur. I bur twice on both sides up to a medium grit

Then I go for time, on fine and extra fine. I do massive and ballanced strokes on both sides, Not checking for a bur again.

With just use ceramic I get good mirror results.

Seems to me the knife should tell you when to switch stones or sides, not some arbitrary count?

Are you going to find a way to rig that to a sharpening system? At this point it wouldn't surprise me, or is that to learn what kind of pressure your using.
