Hi guys, when I buy a knife, it's pretty sharp, but it has deep scratches on the edge. When I sharpen my knives, they're much smoother, but also more dull than the purchased knives. I'm having a problem with getting my knives paper-cutting sharp. I start with low grit, 30 strokes per side, move up to 1000 grit with 90 per side and so on. I'm getting a decent sized burr and successfully removing it before moving onto the next grit. Can someone help me figure out why my edge is smoother but it's still duller?
