Why didn't I buy them?

On woot just now there was a 7 piece Shun Knife set for $250. Steel handles, damascus steel blades, with a VG-10 core. I feel like a dunce for not buying 3.

Depends on the set, I guess. Truth be told, I'd be happier with a couple Forschner Victorinox knives. I like a knife with some decent weight and can take a beating without chipping.

There's always a chance. Truth be told, I tend to use just three knives in the kitchen. I use a Four-Star Henckels chef knife for most tasks, a cheap Chinese cleaver for bones, and whatever folder I have around for paring tasks. That way, I know what's sharp and what isn't. Nothing like trying to dice up fatty cuts of meat with a dull blade.

What is woot?

That was a pretty good deal. I paid $300 shipped for a 7 piece set but I got a "free" sharpening steel to go with mine. I just went and checked the site where I picked mine up they have sold out and just have pieces left.

They really are nice knives. They are like giant razor blades. But like YayIlikepie, I keep a few cheapies around for the few cutting task that I do that might chip the blade. I still find myself using a cheap ebay ulu more than I thought I would when I got the shuns. The one thing that bothers me about the ulu is that the edge tends to roll but I really like the way the function. The Shuns have kept a great edge.
