Why does forged stainless steel blades not stay black?

hi all,
when forging stainless steel blades from 14C28N, why does all the scale pop off during heat treat?

Or more to the point, how to make them look black and nice in a way that lasts?

Not able to add photos here, but my forged stainless blades are brown/grey while 1084 blades are dark and black looking.

I have read the chromium makes the scale come off easier, while on Instagram I see for instance blenheimforge post photos of forged stainless blades that have a deep, black finish.

Is there a trick here?
