Yeah, why don't we? Razor-edges are so highly exulted here by some that it seems to be the cream of the crop, the pick of the litter in knife collectioning. Buy a scalpel then or a real razorblade. Surely it must be adequate to perform a wide range of needs. No, sharper is not always better. We do other things with our knives besides just shaving, don't we?
