If you're on a budget, I might suggest Marbles, they're decent for general work. My Dad has an old Kinfolk with a leather stacked handle he's had since I was a boy (that was back when Moby Dick was a minnow), and it's still going strong. Also, AG Russell has some in his online catalog if money isn't a problem.

While this knife is very nice with leather handles I recommend that you consider the same knife with birchbark handles. The latter version feels much nicer to me than its leather-handled counterpart, especially in the cold.

I got a old SOG bowie with gun-blued carbon steel. Never use it, so cannot tell you anything except it is thick, heavy and built like a tank. SOG Carbon Bowie
I just want to add that you won't be disappointed in the KABAR classic. I own one. It feels very solid, you feels like you just can't break it. And they're in everyone's budget.
