My wife asks me, "How come I don't have a chef's knife?" Well, I had to fix that situation! I just finished this one earlier today. 8" Euro style chef's knife in 63HRC CPM154 with beautiful stabilized Koa handles and a rounded/polished spine. Both blade and handle are hand rubbed to 1200 grit. Zero grind and then a 10° per side 1 micron edge. It is THIN. Thanks for looking!

Ok, seriously.... this knife is beautiful! She is fortunate to get such a fine gift.

Very nice. CPM154 is probably the best Steel for most Wives. My wife only uses a 5” Petty in CPM154 but it is definitely set up with a less aggressive edge angle. Probably .007ish and12 dps. I hit it on ceramic hone from time to time and razor edge mousetrap every now and then. Sharpen it every six months or so. Takes tons of abuse. It stays very sharp compared to your average Henkel.
