Supposed to be very tough stuff. Last time I ordered direct from him he was very open to answer questions

Mine has held up very well- zero chipping or rolling and I've pushed it pretty hard and thinned it some.

I've emailed Mr Winkler a couple times and he's responded very quickly

I believe the Winkler 80crv2 is at 64 HRC ... I own a couple Winklers they are a bit thicker blade and they are extremely strong ... I have field dressed and broken down two Elk without touching the blade ...

I used one to dress and break down a bear and there was no damage to the edge ... they take a good edge seem to hold it fairly well and shapen easily.

*** I took the HRC of 64 off a misprint on a dealer sight I checked the 80crv2 is ran at 60 - 61 HRC not the listed 64.***

AG Russell has the hardness at about 60 Rc. I have one blade in that steel, and I doubt that it goes over 60 Rc. The steel is more tough than strong.
