I decided to give a Santoku a try. This is 01 1/8", 7" blade and 11.5" OAL heat treated and tempered 2x for 2 hrs at 325*.

I heat treated the stock first before grinding. I still am deciding if I should put a 15* or 20* edge on it. Grinding heat treated blade you sure could feel the difference between the harden blade and the soft handle.

I have not decided exactly what to do with the handle. I have some walnut used for weatherby stocks from about 30+ years ago, but I am leaning toward blue G10. Then there is the bolt or pin decision :)

I like the blade shape. I would go for the 15degree edge and see how it holds up. If you don't like it, it won't take much to knock it back to 20 degrees.
 
Id also go closer to 15. If that tang is hardened gonna be tough to drill holes thru.
 
Tang is dead soft.:D

15* is probably the best choice.

Since many of the Japanese Santokus are around 65 Rc. I was going for a higher Rc and according to Starret 62/64 Rc is from 300*/350*

Sounds good to me. Hope it works out. Nice looking blade by the way. Show us the finished product.

I don't know if I like the handle shape, but I love the blade shape, looks like it'd be very useful.
 
I just got done putting the handle on this one. I still have to do some final finish work and put an edge on it.

This is going to my oldest daughter for Xmas present.
