Do you need a dealers license to sale knives in Wisconsin?

No. In fact I don't know of any state with such a law. It's possible there might be a city-specific law but as of this writing I am only aware of such laws being proposed. They did not pass though.

As stated there most likely is not a specific license needed to sell knives, but most state and local governments have a requirement to have either a general business license or tax collection "permit" or both. These days most open air "flea" markets require a whole sale buyer's certificate to sell at their location, to prove you have registered to collect sales tax with the state.
