Is it my imagination or not that plastic cutting boards dull edges quicker than wooden ones?

It depends. Some good plastic ones are pretty soft (more like a flexible rubber sheet). But you are probably correct that a wooden cutting board is preferred over many offerings on the market. I have seen glass and stone (marble) offered at a premium price...in their defense they are usually called "prep boards" and hopefully are actually intended for rolling/kneading dough.
Even a wood board can dull a knife if you routinely slam an edge into it though. Last night I was visiting my mother and she was using a knife I recently sharpened. Every time she went through the vegetable you could hear a loud 'SNAP" from across the house, then she used the edge of the knife in a lateral sweep across the board to scrape the vegies into a bowl. I stood there with my hand on my forehead as I heard a sound as offensive as nails on a chalkboard...
They absolutely do. Just goes to show how "Smart" we are. New and Different ain't always better.
Just easier to clean. God forbid little Johnny ingest a nasty germ and maybe develop an immunity![]()
At least my wife stopped using the counter top as a cutting board and it took her 7 years until I convinced her to throw out the glass cutting board. I had to show her the price of the Shuns I got for her.
Glad you convinced her...While Shuns are expensive, wives are even more pricey![]()
