So it comes with 17 & 20 degree guides, BUT the included hone attachment is set at 25 degree guides. Why??
 
I have one. It gets my knives crazy sharp. I just use the 20 degree and unlock the pivot. Believe it or not the diamond plates are good quality
To help answer your question it seems the ceramic hone is to further burr removal.

I have it. I tend not to even use the guides since depending on the knife blade stock thickness it really is a suggestion rather than a true angle. A thin Opinel is going to be at a different angle than my Ontario Rat 5 fixed blade for example. When it comes to the more obtuse angle on the hone; that is typically for burr removal or micro beveling. Set the angle with the diamond plates and then get a micro bevel/burr remove. Again, I tend to skip this step and take it straight to the strop after the diamond plates anyways but it is there if you want to use it.
