Work sharp question for newbie

Hello all. I have made up my mind and decided to purchase the Ken Onion edition work sharp. I have a few japanese wet stones that I use now for sharpening my straight razors at work. (I am a barber), but I want something a little easier to take care of my kitchen knives, fishing knife and fillet knife. My question is, in your opinion, what would be the workhorse grit that would be used? (coarse, medium, fine) I figure I can go ahead and get some extras with my initial order. Thanks for the advise in advance.
 
There is a thread here on the KO worksharp, that goes into some detail, and has a good post with conversions of the worksharp grits--x-whatever to traditional belts, if I was you I would check that thread out, and make a call on what other belts I wanted after reading it. Hey thanks, I found it! I am still trying to get used to this forum and the searches. Looks like I will be ordering an abrasive cleaning stick with my purchase, thanks to that thread!
