I'm going to guess that the tang geometry is far too different between the two to make a functional knife. The Opinel is not designed for use with a back spring, so the notch is too high on the back, and there's no "kick" in the front. I doubt if it could even be modified without relocating the pin hole on the Opinel.
Here's a #6 disassembled:
Now here's an example of a SAK blade:
You can see that there's a pretty big discrepancy in the geometry, to the point that I don't think you could modify one to fit the other.
It’s popular to put a spyderco honeybee blade onto a SAK, less modification than an opinel blade. The multi tool forum is where all the SAK modders hang out, and you’ll find more info there.
I suppose you'd get closer, but it's still not the right geometry at the tang. You'd probably be better off just grinding the Opinel into more of the SAK spear point. As far as I'm concerned, the steels in either knife are more/less the same as far as edge holding and sharpenability. The Opinel stainless might have a slight advantage in carbon content and edge holding, but probably not enough for the average user to notice a difference.
Personally, I think there are better ways to spend my time and money, but to each their own.
