So I have a reasonably comprehensive set of Wusthof Classic Ikon knives and I use the Wusthof pull through sharpener to main the edge on these knives. However the Santoku is sharpened to a slightly narrower 10 degrees as opposed to the 14 degrees of the other knives.

should I consider getting something like the Minosharp for specifically the Santoku? I know it’s primarily designed for Global knives but I would imagine it’s perfect for the Santoku for that reason?

I wouldn't put any of my knives through a pull-through sharpener. They cause way too much wear on the blade, miss a big chunk at the back and don't refine the edge worth a darn.

I'd get a Norton Crystolon JB8 and a Sharpie, grab a cheap pairing and knife and learn how to sharpen. Tons of resources here and on YouTube.

If you want a good edge, take them to a sharpening service known to be good or learn to sharpen.
Pull through sharpeners are the worst option - under a microscope you see that they are brutally bad.
