I have a set of Wusthof Inox knives that I recently found at an estate sale. I can't seem to find any information on when they were made and how they compare in quality with the current Classic/Classic Ikon lines. I am assuming that they are older than these lines. Are they carbon steel? Any information would be greatly appreciated.
