Maybe a new SAR4 would do better for the cutting instead of the bushman ,,,, :D :D or any other Busse blade,,,,,and thanks for sharing with us.
 
Nice photos throughout your post! Really know how to make a guy hungry!! Great looking food, just curious when's dinner?!! Trimming down the bamboo shoots seems pretty easy, how far down do you trim them? Is that a certain species of bamboo? Since all the ones' I've seen in the USA are much smaller growing then that in your pictures.
 
I'll second that. Get rid of the CS blade and get a busse. You won't be sorry. The pictures are really cool!

Phyllostachys，the most ordinary bamboo of China.we trim a bit down.
 
I also enjoy your pictures. Great looking meal too! What part of China is this?
