Hi all
I've read through a bunch of the santoku threads in the forum, but still think its the best knife for me desipite its recent trendiness. I'm looking at getting the forged F. Dick santoku. Anyone have any experience with this? Any other recommendations at this price (I'd go up to $60, $65). Thanks in advance.

No experience with this Santoku, but it is a very nice and useful bladeshape in general. For that money I think I would go with the one made by Spyderco http://spyderco.com/catalog/details.php?product=67. You can even save a couple of bucks (You should be able do get it a bit cheaper online if you shop around a bit). It might not look as pretty as the F. Dick with its rivited handle, but will probalby perform better. With the Spyderco Satoku you are pretty much guaranteed a good edge profile and a very decent steel (for stickly kitchen use MBS-26 is more than just decent. It is a very fine grained steel capable of a very fine edge and has excellent corrosion resistance but it isn't as strong in edge holding as VG-10 or S30V), while I wouldn't be sure about either in the F. Dick model.
