Just as the question states...

For me:

1) Zero Tolerance 0560
2) Spyderco Air
3) Boker Kwaiken(with a flipper and all problems fixed)

Easy, spyderco para 2 (don't own one yet), benchmade griptilian, zero tolerance 0801.

1. CRK Large Sebenza 21
2. Spyderco PM2
3. Spyderco Sage 2

If I absolutely had to depend on 3 knives I'd pick these from my collection.
Spyderco Super Blue Mule. A great razor sharp slicer/skinner
Grayman Dua. Sturdy beater folder
BK-9. Big chopper

Ten inch chef's knife, 6 inch boning knife, and a paring knife. I need to cook, but I don't need to carry a pocket knife.

1. ESEE Junglas
2. Fallkniven S1
3. CRK Sebenza 25

I'll cook with all of them, won't be pretty, but it'll do

1. Spyderco Delica 4 FFG

2. Spyderco Police

3. Cold Steel Natchez Bowie

I only own the Delica now.

Folders:

1. Benchmade Rukus

2. Benchmade Contego

3. Hogue EX-04 modified Warncliff version

Fixed blades:

1. Ka-Bar Heavy Bowie

2. Cold Steel Trailmaster

3. Ka-Bar ZK War Sward

These kinds of questions are too painful to contemplate so I'm not going to make any hard decisions here.

I would want an EDC knife, which could be a PM2 or BM 581. (I have both of these)
I would want a large folder, which could be a Manix 2 XL, ZT 0200 or ZT 0561. (I have the ZT's and I want the Spyderco)
I would want a good sized fixed blade which could be an ESEE 5. (I don't have a big ESEE but I do have a Randall and a Blackjack copy of a Randall, either of which would probably suffice)

1.small sebenza Lisa Pick
2.Large 25
3.old style umnumzaan

Randall 12-8
Large Left handed Sebenza
Schrade Sharpfinger

Folder:

*Benchmade Gold Class Griptilian
*Hinderer XM-18 3.5" spanto
*Mnandi

Fixed:

*Fehrman Extreme Judgement
*Fehrman Last Chance
*Strider KaBar
