you guys see this ozitech sharpener??

i jsut read through the PDF on the page and apparently it makes em sharp by doing a 20 degree angle edge and creating micro serrations
 
If that is the case then it may be scraping an edge onto the knife. That is usually not good over the long run. I have never had any faith in the scraper or wheel type sharpeners.
 
thats what they do, scrape an edge. i would suggest not getting one. my brother in law used a similar sharpener on a fillet knife of mine. i was mad as all get out that he had the nerve to use such junk on my knife and will never loan him a knife again. it left grooves all along the edge that took many sharpenings to get rid of.
 
those v'rod style diamond/carbide sharpeners are only good for $2knives in the long run. they really scrape the metal of the edges. yucks

I agree....but...I keep some cheaper knives on my counter for everyone else to use. It annoys me that I have to spend time sharpening these knives to keep them safely sharp. This is good quick way to keep them sharp and saves me time. I really don't care about these particular knives. I'm going to grab one of these today and test it out on a couple of cheap kitchen knives.

well I picked one of these up today. $39.95 which is a too much IMHO. I tested it out on some cheapo kitchenaid stainless kitchen knives. The knives were somewhat dull to start. I ran a couple through the sharpener and it does seem work pretty well. it does , as stated earlier in this thread, scrape metal off the blade. it's doesn't seem to scrape as aggressively as other sharpeners i've seen. of the three knives i tested, it took about 15-20 swipes to get an edge to cut paper reasonably well. the edge felt rough and toothy so it should do okay for most kitchen tasks. i cut up some onions and tomatoes quite nicely.

all in all.....i think $40 is too much for this device. it does perform as advertised but understand what it is doing to your knives. i would NEVER use this on any quality knife, but use it on a cheapo I could care less about....sure why not.
 
I picked up one from eBay a couple of months back for $28 plus shipping. It's really just a hone for kitchen knives. I have a set of Cutco kitchen knives and a couple of Furi santoku knives. I wouldn't put my Microtech thru it, but it actually does a good job when I'm too lazy - or in too much of a hurry - to pull out My Spyderco ceramic sharpener.
