Interesting ... I know apples contain malic acid. Looks like maybe that, along with lemon juice and IIRC some vinegar (mom used to make it) makes quite a patina. Does is seem fairly "deep"/durable?
 
The other day I was experimenting with a nearly new CASE Large Stockman in cv. I found a pear that,as they often do,had suddenly gone rotten,cut it in half and stuck the Spey and Sheepfoot blades in each bit overnight.Next day, blue/black! Pears seem surprisingly more acidic than apples,despite being sweeter.
