Just curious how the steel performs, in interested in it's qualities and wanna know your guys experience in how it holds up in everyday use. Primary concern being how long does it hold and edge and ease of sharpening
N680 is very rust resistant due to using more Nitrogen than Carbon like H-1 steel. It also holds its edge very well and a bit more time consuming to sharpen than N690.

"A conventionally produced corrosion resistant steel with added chromium, molybdenum, and nitrogen for corrosion and pitting resistance, especially in salt water. Fine structure with a very good sharpness, edge retention, and grindability. Will accept a fine polish. Hardens and tempers to 56-58 HRC."

Based on how often I had to resharpen, it holds an edge about like 440C, 154CM, VG-10, etc. Not a "super steel" like M4, M390 but a good serviceable steel. I sharpen on diamond hones, so anything's easy to sharpen, but N680 does take a nice sharp edge fairly easily
